Sweet Potato Bars.

I love sweet potatoes.  I remember as a young child  digging  them up out the ground.  To bake them we would place them in the fireplace (yep you heard me correctly, the fireplace) to cook on the ashes that were left by the hickory wood. Ahhhh those were the good old days.  Now, Lets get to the recipe. You going to need 2 cups of mashed sweet potatoes, 1 cup of oats, 1/4 ccup of cookie butter, 1 tsp of vanilla extract, 2 Tbsp of sweetner, 1 tspof cinnamon, 1/4 tsp of ginger and 1/4 tsp of nutmeg.  Mixed everything together in a bowl. Place in a greased pan and baked in a preheated oven on 350 for 25-30 minutes.  Place on a wire rack an cool.  Cut into squares and sprinkle with unsweented coconut flakes (Optional)   Enjoy :) You can add in rasins, nuts, chocolate chips and vegan marshmellows.
To keep this recipe gluten-free just omit the cookie butter.
