Mushrooms, Figs and Rice Ring

Hey Yall, welcome to my Kuntry Vegan Kitchen! Don't be alarmed by this recipe. It's easy to make and the figs are what actually make the dish and you don't wanna leave them out.

Boil 1 cup of plain rice according to package directions adding in 1 tsp of turmeric, and 1 vegetable broth cube. Meanwhile, chop 8 figs and 1/4 cup of fresh parsley, set aside. In a medium pan, saute 1 pt. of mushrooms and 1/2 medium onion for 3 minutes on medium heat and set aside.  In a pot pour in a 12 oz bag of frozen peas and carrots, pour enough water over them to cover and bring to a boil and let simmer for 5 minutes, drain and put away to the side.  Now in a bowl mix together rice, parsley, onions, figs,  and mushrooms. Now, this part may be a little tricky so listen carefully.  Spray a bundt pan with oil. Add the rice mixture. Press the mixture firmly into pan and let rest for 10 minutes.  Now on a serving plate invert rice, it will look just like a bundt cake, but its rice instead :)  Fill with carrot and peas. Garnish it with figs and mushrooms, enjoy!
